Sweetpotatoe-Chickpea-Lentil Curry - HCLF Vegan recipe

I love sweet potatoes, I love chickpeas, I love lentils, I love rice and I love curry!! So I created this HCLF vegan curry which contains each of these ingredients! It doesn't need coconut milk (although I believe this could be really tasty) and is ready in only 30 minutes! Isn't that great?
I like to eat it as my normal lunch or dinner but also a little bigger portion as a kind of "preperation meal" around 1-2 hours before I work out. The rice and the curry give me so many healthy carbs and protein so that I can absolutly kill my workout ;)
I hope you like the recipe, for more recipes give my blog a follow and leave a comment! ♥

Ingredients for 2-3 servings:
- 1 sweet potato (about 300 gr)
- 1 onion
- 1 clove of garlic
- 100 grams red lentils
- 200 grams chickpeas
- 300-400 ml vegetable stock
- 1 teaspoon cinnamon
- 1 teaspoon cumin
- 3 teaspoons curry powder
- half a chili (I used dried one)
- 300 grams rice of your choice
- half a lemon and some spinach (not necessary)

Peel the sweet potato, onion and garlic. Cut the sweet potato into cubes, chop onion and garlic. Heat up a pan and cook the onion and garlic with some water for about 2-3 minutes. Add spices and mix together. Add sweet potato and vegetable broth, let it cook on medium heat for 10 minutes. Cook the rice in seperated pot. After 10 minutes, add the lentils to the curry and cook for 10 more minutes. Add the rinsed chickpeas to the curry and wait 2 more minutes until they are warm as well. Sprinkle the juice of half a lemon on top and season with salt and pepper if you want to.

You can also sauté the spinach in another pan with some water and serve with the rice and curry.

- 1 Knoblauchzehe
- 100 Gramm rote Linsen
- 200 Gramm Kichererbsen
- 300-400 ml Gebüsebrühe
- 1 TL Zimt
- 1 TL Kreuzkümmel (Kumin)
- 3 TL Curry Pulver
- eine halbe Chili (ich habe getrocknete verwendet)
- 300 Gramm Reis euer Wahl
